Pink Sunflower Seed Cupcakes




ok so i'm not the best at naming my cupcakes... i admit it. it is a rather lame name for such pretty cupcakes, if i do say so myself. i was having a rough day on wednesday and all i could bring myself to do was bake, so bake i did -- mia even helped stir the batter :) the pink frosting is strawberry and actually very yummy and the little flowers are all made out of chocolate covered sunflower seeds... hence "pink sunflower seed cupcakes." yeah, i know... i gotta come up with better names...

Double Star Teeny Tiny Cupcakes - Gluten free!

i made teeny tiny cupcakes! and what's more, they're allergy free (egg, nut and dairy)... the ones with the pink stars are gluten free and the ones with the yellow stars are not gluten free (but other allergy free). so i thought i'd post a little "recipe" (if you could call it a recipe) for egg, nut, dairy and gluten free cupcakes! this is what i used for my double star teeny tiny gluten and allergy free cupcakes:

1 package of Gluten-Free Pantry's Old fashioned cake and cookie mix
1 can of Hansen's Raspberry soda (you can use any type of soda, like coke or 7 up)
1 package of Cherrybrook Kitchen's Vanilla frosting (+ rice milk & 2.5 sticks of non-dairy margerine)
2 packages of Starburst Fruit Chews
1 package of sugar crystals (pink)

mix cake mix and soda. put in cupcake molds. 350 degrees for 15 minutes (for mini cupcakes). make frosting according to directions. let cupcakes cool, frost them. edge with sugar crystals. cut star shapes out of starbursts with fondant cutter. put all together and voila! allergy-free cupcakes ;) (although starbursts have some dyes so be sure to check if you are allergic to dyes).

Paisley Mistake-Cakes

for my friend jen's indian-themed bachlorette party, i made it my duty to make cupcakes. my cupcakes were supposed to look something like this, but they ended up looking like this instead, where the "paisley" looks like a little bit like a treble clef instead of a paisley... i was bummed :( but they were yummy devil's food cake and tonight i had the last leftover cupcake and it was gooooood. sorry jen, that they didn't come out all indian-themed!

Working on Sundays is POO Cupcakes

because working on a sunday is big-time poo, i made these cupcakes for marco and his co-workers. it's a little pick-me-up for them and an easy craft for me to do with mia, who helped eat the leftover strawberries :)
